Black-Bean and Tomato Quinoa

Time for a fresh, summer recipe!  And who doesn’t love quinoa?  I wanted something fresh, and I must say I’m a sucker for anything made with cilantro.  Side note – how much fun is it to use your own, home-grown ingredients?!  I was only able to use my own fresh cilantro in this, but soon I’ll have tomatoes to use, too!  By the way, snuck a taste of a ripe tomato, delicious!  Cannot wait to have tomatoes all summer long.  That is, if I can stop eating them off the vine as soon as they’re ripe.

I found this recipe via Pinterest, but it linked back to Punchfork.  Punchfork was introduced to me by my dear friend Celeste, and I really love what I’ve found there so far!  I’ll just link back to the recipe since I didn’t create it, and I like to give credit where credit is due!  The only thing I may change in the future is the butter. I think you could probably use olive oil in its place, but, it was great with the butter.

This is really worth making!  I used it as a side-dish with a “paleo-friendly” salmon recipe so the hubby could enjoy.  But, this would make a great light dinner served with some greens, and the leftovers serve as a great lunch the following day.
