Strawberry Almond Milk Smoothie

Holy wow. This was delicious, and so simple! I was wondering if it was even worth putting on the blog because the recipe is literally two ingredients!
My husband went on the Paleo/”Caveman” diet two weeks ago and so (to my utter satisfaction) we’ve been eating lots of fruits and veggies. I followed the recommendation of my sweet friend Mallory and started making smoothies for us for breakfast. I started making them with just berries and fruit, with a little water and ice since he can’t have dairy. But, I tried mine with something different today: almond milk. Delicious! This little nut is my new favorite thing! Great for a snack, great in a salad, great as a spread, and now great in a smoothie.
I purchased slightly sweetened (with natural cane sugar) almond milk from Trader Joe’s, but hubby can’t have any sugar. So, I’m going with the unsweetened variety next time. Just as good, especially when added to something naturally sweet like fruit.
So here’s the recipe:
- Fresh strawberries
- Almond milk
- Whatever else you’d want to add!
The almond milk makes the smoothie much creamier than water without adding dairy. Big fan! I also tried almond milk in my coffee this morning. Again, delicious!
I would recommend purchasing strawberries from a farmers market or something similar. We went to the NC State Farmers Market over the weekend and were immediately hooked. No better place to buy your produce! I thought the strawberries from Trader Joe’s were good, but they don’t even compare (and I LOVE Trader Joe’s!)
To simple, healthy food!

I’ve been on a smoothie kick too, recently — it’s such a wonderful blank canvas for creative and tasty combinations. I’ve been trying dates, flax seeds, peanut butter, avocado…NUM.
Sounds delicious! Might have to try some of those combinations!
Love almond milk! We avoid dairy and sugar as much as possible in our house too! Another thing you should try for breakfast is Chia Pudding! By some Chia Seeds (not powder) at Whole Foods or Harmony Farms. Mix 1/4 cup of Chia Seeds with 3/4 cup of a Coconut Milk/Almond Milk blend, let set on the counter for 25 minutes or so. Top with sliced strawberries (I usually add Blueberries too, just because they’re yummy!) This makes two servings. Chia seeds give you lots of energy, great for breakfast!
