Vegetarian Tacos with Goat Cheese

Warmer weather has me craving lighter dishes. Hello salad and fresh veggies, goodbye slow cooker stews! One of our favorite “warm weather meals” is tacos.
I found this recipe last year on Real Simple and I actually tried it with tofu this time. It was pretty delicious! Not to mention the recipe calls for goat cheese, and I will eat anything with goat cheese.
I’ve also tried this recipe with a bean and fresh salsa combo, rather than the tofu and corn. Both are yummy!
Here’s the recipe.
Vegetarian Tacos with Goat Cheese
- 1 tablespoon of olive oil
- 1 14-ounce package of extra-firm tofu
- 1 1/2 teaspoons chili powder
- kosher salt and black pepper
- 1 10-ounce package of frozen corn
- 1 5-ounce package of baby spinach
- 8 small flour tortillas
- 3/4 cup crumbled fresh goat cheese (yum)
- 3/4 cup store-bought refrigerated salsa (I like Jack’s Special Salsa from Harris Teeter. Amazing!)
