Vegetarian Tacos with Goat Cheese

Warmer weather has me craving lighter dishes.  Hello salad and fresh veggies, goodbye slow cooker stews!  One of our favorite “warm weather meals” is tacos.

I found this recipe last year on Real Simple and I actually tried it with tofu this time.  It was pretty delicious!  Not to mention the recipe calls for goat cheese, and I will eat anything with goat cheese.

I’ve also tried this recipe with a bean and fresh salsa combo, rather than the tofu and corn.  Both are yummy!

Here’s the recipe.

Vegetarian Tacos with Goat Cheese

  • 1 tablespoon of olive oil
  • 1 14-ounce package of extra-firm tofu
  • 1 1/2 teaspoons chili powder
  • kosher salt and black pepper
  • 1 10-ounce package of frozen corn
  • 1 5-ounce package of baby spinach
  • 8 small flour tortillas
  • 3/4 cup crumbled fresh goat cheese (yum)
  • 3/4 cup store-bought refrigerated salsa (I like Jack’s Special Salsa from Harris Teeter.  Amazing!)
